  • Pinch of saffron soaked in warm milk
  • 10-12 raisins
  • 5-6 almonds and cashews (sliced)
  • Salt to taste (as per your personal choice)
  • ½ apple or pomegranate seeds (for garnish (not compulsory))
  • 1 tsp sugar (optional)

Instructions:

  1. Heat ghee in a pan and lightly roast nuts and raisins lightly. Set aside.
  2. After that, add the whole spices directly to the pan and sauté(fried quickly).
  3. When the whole spices roast, Add soaked rice and stir gently to coat the rice with ghee and spices.
  4. Add 2 cups of water and saffron milk. Cook covered until the rice is soft.
  5. Gently mix in roasted nuts and fruit before serving.

Local Tip:
Cook on a low flame using a heavy-bottom pot, which is similar to the slow-cooking style (dum) traditional in Kashmiri households.
